Delish summer salad
Tomatoes are now ripe on the vines, so let’s take advantage of them! Garden tomatoes are my most favorite summer food and, as you probably already know, cheese is my favorite all-year-round food. The recipe I’m about to share with you combines them both. Plus it’s super easy which makes it a winner for me.
I got this recipe from Sarah over at Thrifty Decor Chick. She’s a girl after my own thrifty heart. Not only does she offer great ideas for decorating on a budget, but the food she makes is easy and yummy.
Caprese Salad — or Insalata Caprese (salad in the style of Capri) — is a simple salad from the Italian region of Campania. In Italy, it is usually served as an antipasto (starter), rather than a side dish.
Ingredients: Sliced tomatoes, fresh basil, soft mozzarella, olive oil and your favorite flavored vinegar (I use red wine vinegar for this recipe). Then add salt and pepper (I also add some Italian seasoning) to taste. That’s it!
Then just arrange everything so it looks pretty and watch your family and friends ooh and aah over your creation. Trust me. There will be lots of oohing and aahing.

This has to be one of my new favorite snacks! It is healthy and tasty. I also believe that this very easy to make for a picnic, family reunion, etc.
