My favorite summer tomato dish: Caprese Salad

OK, so you are all aware that I rarely share recipes on this blog, mostly because I’m too busy with all the DIY project craziness going on around here. While food is very near and dear to my heart, cooking isn’t. 😉

But today, I want to share with you a super easy, yummy summer salad recipe. The best part? No cooking required.

Garden tomatoes are having their moment right now, which means it is time to take advantage of them. Tomatoes are my most favorite summer food and, as I mention in my About page, cheese is my favorite all-year-round food. This recipe combines them both.

Caprese Salad – or Insalata Caprese (salad in the style of Capri) – is a simple salad from the Italian region of Campania. In Italy, it is usually served as an antipasto (starter), rather than a side dish.

Ingredients: Sliced tomatoes, fresh basil, soft mozzarella, olive oil and your favorite flavored vinegar (I like to use red wine vinegar for this recipe but any vinegar will work). Then add salt and pepper (I also add some Italian seasoning) to taste and make sure everything is coated really well.

I like to arrange the pieces so they look pretty.

Then it’s time to dig in!

    So delicious! This is wonderdul with a balsamic vinegar reduction. It gives it a different flavor than simple vinegar.
